In this section of Seattle Organic Restaurants I’m going to talk about green leafy vegetables that can help to prevent colon cancer. Here are some of the greens that are full of nutrients, vitamins, minerals and fiber and can help you lose weight and fight cancer.
Chard: Chard is a great source of minerals such as magnesium, calcium, antioxidants and vitamins such as vitamin A. Chard can increase the body’s immune system against free radicals, bacteria and environmental pollution.
Consuming chard on a regular basis can help to prevent inflammatory problems such as lung inflammation and emphysema. If you smoke or you are a second hand smoker make sure you to include chard in your daily diet. Consumption of vitamin Beta carotene and fiber in chard can help to prevent the growth of cancer cells.
Leek: Leek is a high source of nutrients, vitamins like vitamin B6, C and folate, minerals such as manganese, calcium and iron and antioxidants. Leek can help to increase the level of good cholesterol known as HDL (High Density Lipoprotein) and can help to lower the level of bad cholesterol known as LDL (Low Cholesterol Lipoprotein). Leek is a rich source of fiber and can help to prevent diseases such as heart issues, high blood pressure and cancers such as prostate and colon cancer.
Kale: Kale should be a part of your daily diet. A bowl of kale has 40 calories, no fat and 20% fiber. Kale is a great antioxidant and a rich source of flavonoids and carotenoids. Kale is full of vitamins such as vitamin A, C and K and minerals like manganese. Kale is a great anti-inflammatory, can help to cleanse the body and fight cancer cells.

Celery can increase the body’s immune system and fight against infections and inflammatory diseases. Celery can increase the number of white blood cells fighting against colon cancer. Celery can is great for fighting high blood pressure.
Broccoli: Broccoli is a high source of potassium, magnesium and calcium. The rich source of potassium in broccoli can help the muscle growth. Keep in mind that calcium and magnesium in broccoli can help to lower the blood pressure.
Broccoli is great for skin problems and can protect the skin against sunburn. The beta-carotene in broccoli helps to boost the body’s immune system and the glucoraphanin in broccoli is anti-cancerous and regulates liver function.
Vitamin K and calcium in broccoli can help to promote healthy bones and vitamin C in broccoli can fight against cancer and free radicals in the body.
