Tilth is featured as the new American cuisine mostly made with certified-organic and wild ingredients sourced from local farmers in the Pacific Northwest. The executive chef and owner of Tilth is Maria Hines who is well-known for her experience in creating gourmet cuisine with seasonal, organic and fresh ingredients. Tilth has received its organic certification from Oregon Tilth which is an unaffiliated organization that promotes sustainability.
